I am a huge fan of chick peas. Q and I made some baked fish last night for dinner and I wanted a salad but I had a salad with Mesclun for lunch so I wanted something a little different. Sometimes I feel like a rabbit if all I eat is greens even though I know they are good for me, I just get bored.
This is a great recipe that I found via Pinterest. It has a bunch of things that I love like black beans, corn, tomatoes, cilantro and garlic to name a few.
I made the following tweaks to the recipe:
– I did not add the cucumber
– I added an avocado because I had one on hand that needed to be used otherwise it would go bad
This makes a huge bowl of salad so I will most likely have this for lunch tomorrow with a piece of baguette. You could also put this salad on top of romaine, spinach or mixed greens.
