I am 7 months pregnant and now with all of the prenatal tests behind me, am finally able to truly relax and enjoy my Frankenfeet, Cankles and all of the other crazy things that happen to your body when you’re pregnant. You know what? I am just going to go with it. My body is not my own anymore and that’s A-okay with me.
Friday night my college roommate, dear friend and bridesmaid at my wedding, Shealah Craighead came for a visit. We went to a local restaurant in my neighborhood and I ordered a really yummy salad.
Here are the ingredients (measurements are approximate):
Wild Arugula – 4 cups
Pecans -1/8 cup
Goat cheese – 1/4 cup small slices
Granny Smith Apple – 1/4 of an apple small slices
Dried figs – I used 4 and sliced them
Red Wine & Olive Oil Vinaigrette – 1/8 cup -1/4 cup depending on how much dressing you like.
Finish with Salt & Pepper
I was delighted by the combination of flavors so I decided to recreate it at home tonight. Which gave me an excuse to go shopping for cheese today. I love shopping for cheese especially at the specialty stores that allow you to taste everything you want. They should be careful with me as I can very easily put them out of business with all of the free sampling!
I used this Goat cheese for the salad, it’s not too sharp and has a very smooth flavor. I also was feeling lazy so I bought Annie’s dressing instead of making my own.
This is my new favorite salad. I am going to make this tomorrow night too.
